What you need

head cabbage

cucumber

tbsp fresh ginger

tsp cayenne pepper

tbsp sake

tbsp garlic

tsp white pepper

lb boneless chicken thighs

tsp table salt
cup vegetable oil

tbsp soy sauce

cup potato starch

fl oz mayonnaise
Instructions
In a mixing bowl, add garlic, ginger, sake, soy sauce, white pepper, cayenne pepper, and salt. Mix well, cover and let it marinate for at least 30 minutes in the fridge. Add potato starch to a bowl and coat the marinated chicken. Heat oil to 350F, carefully add the chicken in small batches and fry for 3-4 minutes until they turn slightly brown. Transfer the chicken onto a cooling rack and bring the oil temperature back to 350 F. Add the chicken back and fry for an additional 1-2 minutes until they are golden brown.
