Pandan Coconut Jelly Cake ✨🍃

This is one of those recipes I keep coming back to, especially during the warmer months when I’m looking for something light, refreshing, and fun to make. It’s chewy and perfectly balanced with creamy coconut and fragrant pandan. And it’s just so satisfying to slice into those clean layers. 😮💨

What you need

cup water

fl oz coconut milk
tbsp agar
Instructions
In a pot, combine water, agar agar powder, and sugar for the pandan layer. Stir until fully dissolved. Add pandan extract and coconut milk, stir gently and bring to a light boil, then turn off the heat. In a separate pot, combine all ingredients for the coconut layer. Bring to a light boil then turn off the heat. In a shallow dish, alternate pouring each layer (I did 5 total, starting and ending with pandan). Let each layer set slightly before adding the next. Cool at room temperature, then refrigerate for 1–2 hours until fully set. Slice into cubes and enjoy chilled!View original recipe
