Dan Dan Noodles, also known as 担担面, is a popular Sichuan noodle dish and a favorite Chinese street food. This version has a soupier base with plenty of flavors and a toned-down heat level, making it equally enjoyable with a mix of textures from the crispy pork, crunchy vegetables, and smooth noodles.

What you need
bok choy
tbsp oil

roasted peanuts

scallion

oz ground pork

tsp light soy sauce

tsp dark soy sauce

tbsp light soy sauce

tsp sugar

tsp granulated garlic

cup chicken stock

tbsp chili oil
Instructions
1 : Heat 1 tbsp oil in a wok and add ginger. Stir for 30 seconds until fragrant. 2 : Add the ground pork and cook until no more pink is visible. 3 : Drizzle Shaoxing wine, light and dark soy sauce around the edge. Mix well. 4 : Add sun mi ya cai and stir until the pork is crispy brown. Transfer out and set aside. 5 : Bring a pot of water to a boil and add the noodles. Cook for 2-3 minutes according to the package instructions. Add the vegetables halfway through the cooking process. Strain the noodles and greens, rinse them under cold water and set aside. 6 : Add sesame paste, soy sauce, vinegar, sugar, peppercorn powder, garlic, and water to a serving bowl. Mix well and add chili oil. 7 : Place the cooked noodles and greens in and top with crispy pork. Finally, garnish with crushed peanuts and scallions.View original recipe
