Instructions
1 : Add the chicken breast to a pot of water along with Shaoxing wine, ginger, and scallions. 2 : Bring it to a boil and reduce the heat to low, cover and let it simmer for about 10 minutes or until the chicken is fully cooked. 3 : Transfer the chicken to an ice bath. Let it sit in the ice bath for a few minutes to cool down and stop the cooking process. 4 : Shred the cooked chicken into thin pieces using your hands or forks. 5 : In a separate bowl, prepare the chili sauce by combining the listed ingredients. 6 : Pour the sauce over the shredded chicken and mix well. 7 : Add chopped cucumber and cilantro to the chicken mixture.
