Instructions
1 : Add chicken, garlic, cayenne pepper, white pepper, baking soda, soy sauce, and egg to a mixing bowl. Mix well, cover, and let it marinate for 20 minutes in the fridge. 2 : Combine cornstarch and all-purpose flour in a bowl. Add the marinated chicken to the batter and coat evenly; shake off any excess flour. 3 : Heat enough oil to 350°F. Carefully add the chicken in batches and fry for 4 minutes until it turns lightly golden brown. 4 : Transfer the chicken onto a cooling rack and let it cool for a few minutes. Bring the oil temperature back to 350°F. Add the chicken and fry for 2 minutes to make it extra crispy. 5 : Make the sauce by combining the listed ingredients. 6 : Turn the heat to medium-low and pour the sauce into a wok. Add the starch slurry and stir until the sauce thickens. 7 : Add the chicken and stir until all the chicken is coated with the sauce.
