Instructions
1 : Add flour and salt to a large mixing bowl. 2 : Slowly add boiled water while mixing in one direction with chopsticks, followed by room-temperature water. 3 : Knead with your hands until the dough becomes smooth. Cover with a towel and let it rest for 30 minutes. 4 : Prepare 6-8 stalks of scallions, slice them in half lengthwise, and finely chop them. 5 : Make the roux by combining flour, salt, five-spice, and heated oil. Mix well. 6 : Dust the surface with flour and cut the dough into 4 pieces. 7 : Keep the rest of the dough covered while working on one piece at a time. 8 : Roll and flatten the dough into a large, thin layer. 9 : Add 2-3 spoonfuls of roux and spread it evenly. Sprinkle scallions on top. 10 : Roll up the dough into a log and twist it into a coil. Cover while working on the rest. 11 : When it’s time to cook, use a rolling pin to roll the coil into a flat, round pancake. 12 : Add oil to a skillet or cast iron over medium-high heat and lay the pancake in the pan.
