Instructions
1 : Thoroughly rinse the pork ribs under cold water. 2 : Add 6 cups water, pork ribs, and Shaoxing wine to a large pot. Bring it to a boil over high heat. 3 : Remove the ends of the lotus root and peel off the skin. Cut it into thick slices and keep them soaked in water to prevent them from discoloring. 4 : Once the water is boiling, drain and rinse the ribs clean. Transfer them to a clay pot and add lotus roots, ginger slices, scallion, and 4 cups water. 5 : Bring it to a boil and immediately turn the heat to low and cover. Simmer for 1.5 hours. 6 : Alternatively, add the ingredients to an instant pot/pressure cooker and cook on high for 30 minutes. 7 : When the soup is done, add salt to taste.
