What you need

cup water

lb ground pork

oz dried shiitake mushrooms

tbsp fresh ginger

tbsp soy sauce

tsp white pepper

tsp salt

egg white

scallion

tbsp orange oil

tbsp light soy sauce

tbsp black vinegar
Instructions
1 : Combine ground pork, rehydrated mushrooms, ginger, soy sauce, white pepper, salt, egg white, scallions, and heated oil. Mix well, stirring in one direction until fully combined. 2 : Place 1 tbsp of filling in the center of the dumpling wrapper. Wet the edges with water, pinch the middle closed, and pleat one side at a time until fully sealed. 3 : In a skillet over medium heat, add 2 tbsp oil and arrange the dumplings in a single layer. Cook for about 1 minute until the bottoms turn golden brown. 4 : Add 1/2 cup water and immediately cover. Let the dumplings steam for about 5 minutes or until most of the water evaporates. 5 : Remove the lid and continue cooking until all the water evaporates and the bottoms become crispy brown. 6 : Plate the dumplings and serve with dipping sauce made of soy sauce, black vinegar, and scallions.
