What you need

cup orange oil
cup cornstarch

cup all purpose flour

tbsp granulated garlic

tsp salt

tsp white pepper

tsp baking soda
egg

cup orange juice
tbsp orange zest

tsp cayenne pepper

tbsp brown sugar

tbsp light soy sauce

tbsp white vinegar

cup water
tbsp cornstarch
Instructions
1 : Juice 1-2 oranges to get 1/2 cup of orange juice. 2 : In a mixing bowl, combine chicken, garlic, salt, white pepper, Shaoxing wine, baking soda, and egg. Mix well and marinate for 20 minutes. 3 : Add all-purpose flour and cornstarch to a bowl and mix well. Add the marinated chicken and coat evenly. 4 : Heat 4 cups oil to 350F, carefully add the chicken in batches and fry for 3 minutes until they turn lightly golden brown. 5 : Transfer the chicken onto a cooling rack and let them cool for a few minutes. Bring the oil temperature back to 350 F. Add the chicken back and fry for additional 2 minutes until golden brown. 6 : Make the sauce by combining the listed ingredients. 7 : Turn the heat to medium-low and pour the sauce into a wok. Stir until the sauce thickens. 8 : Add the chicken and mix until all the chicken is coated with the sauce. 9 : Garnish with scallions and serve with rice.View original recipe
