Mapo Tofu

What you need

oz firm tofu
tbsp oil

tsp garlic

tsp ginger

scallion

cup chicken broth

tbsp sesame oil
tbsp cornstarch

tbsp water

tsp light soy sauce

tbsp chili oil

tsp sugar
Instructions
1 : Drain and cut the tofu into small cubes. 2 : Optional: Bring a pot of water to a light boil and add 1/2 tsp salt. Add the tofu cubes and blanch for 2 minutes. 3 : Heat oil in a skillet over high heat and add ground pork. Cook until browned. 4 : Add ginger, garlic, doubanjiang, and Sichuan peppercorn powder. Stir and cook for 1-2 minutes. 5 : Add chicken broth and sauce. Bring it to a light boil. 6 : Mix 1 tbsp of cornstarch with 1 tbsp of water to make a slurry. 7 : Turn the heat to medium-low and add the cornstarch slurry. Stir to thicken the sauce. 8 : Add the tofu and gently stir to coat with the sauce. Cook for 3 minutes. 9 : Turn off the heat and add sesame oil along with scallion whites. 10 : Serve hot with rice and garnish with scallions.View original recipe
