The chicken is marinated with Shaoxing wine, soy sauce, oyster sauce, black pepper, cayenne pepper powder, chili powder, and Sichuan peppercorn powder. It’s stir-fried in a smoky wok, complemented with ginger, garlic, and chopped chili peppers for an extra spicy kick.

Instructions
1: Chop the chicken thighs into smaller pieces. 2: Marinate the chicken with Shaoxing wine, soy sauce, oyster sauce, black pepper, cayenne pepper powder, chili powder, and Sichuan peppercorn powder. 3: Heat oil in a wok until it starts to smoke. 4: Add the marinated chicken to the wok and stir fry until no more liquid is left. 5: Add chopped ginger, sliced garlic, and chopped chili peppers to the wok. 6: Stir until the flavors are released from the chili peppers. 7: Add 2 teaspoons of soy sauce around the wok and 3 tablespoons of chili oil. 8: Sprinkle with chopped cilantro before serving.View original recipe
