What you need
cup cornstarch

tsp garlic powder

tsp paprika

tsp cayenne pepper

tsp white pepper

tsp salt

Instructions
1 : Cut off the ends of the enoki mushrooms, then cut into 3 equal sections. 2 : In a large bowl, combine the potato starch, cornstarch, garlic powder, paprika, cayenne pepper, white pepper, and salt. Mix well to evenly distribute the spices. 3 : Gradually add the cold water to the dry mixture, stirring until it forms a smooth, thick batter. 4 : Heat enough oil in a pot to around 350°F. 5 : Dip each enoki mushroom cluster into the batter, making sure they are fully coated. 6 : Carefully place the coated mushrooms into the hot oil, frying in batches to avoid overcrowding. Fry until they are golden brown and crispy, about 2-3 minutes per batch. 7 : Remove the fried mushrooms with a slotted spoon and drain them on a paper towel-lined plate to remove excess oil. 8 : Serve them hot with your choice of dipping sauce.
