Instructions
1 : Cut Chinese sausage into thin slices and set aside. 2 : Crack two eggs in a bowl and add salt. Beat them until the whites and yolk are blended. 3 : Prepare the sauce by combining the listed ingredients. 4 : Heat a wok on high until smoking. Add 2 tbsp oil and pour in the eggs. Scramble until 80% cooked. Transfer out and set aside. 5 : Add the remaining 1 tbsp oil to the wok over medium heat. Add diced onion and white parts of scallion. Stir for 30 minutes until fragrant. 6 : Add the cold rice. Stir and break up any clumps. 7 : Pour the sauce mix around the wok and stir until everything is well combined. 8 : Add the eggs back and mix well.
