Chicken in Sichuan Chili Sauce

1 : Add chicken to a pot of water along with Shaoxing wine, salt, ginger, and scallions.

2 : Bring it to a boil and turn the heat to medium. Let it simmer for 20 minutes.

3 : Turn off the heat, cover it with a lid and let it sit for 10 minutes.

4 : Save 1/4 cup of the chicken broth for later.

5 : Transfer the chicken to an ice bath and let it cool completely, about 15-20 minutes.

6 : Prepare the sauce by combining the listed ingredients.

7 : Once the chicken is cooled, cut it into small pieces.

8 : Plate the sliced chicken in a bowl and pour the sauce over it.

9 : Top it off with 2-4 tbsp chili oil, chopped peanuts, and scallion.
