What you need

dried chiles

dried chili peppers
fresh tomatoes

white onion

garlic

fresh ginger

tbsp white peppercorns

tbsp cumin seed
tbsp dried oregano

tbsp smoked paprika

tsp ground cinnamon

tbsp salt

tbsp tomato paste

cup beef broth

corn tortilla
lime wedge
Instructions
1 : Cut beef into chunks and season with salt, peppercorns, garlic powder, onion powder, and cayenne. 2 : Soak dried peppers in hot water for 30 minutes. 3 : Blend soaked peppers and spices into a smooth paste, adding water if needed. 4 : In a large pot, heat oil and brown beef chunks. 5 : Add blended sauce, beef broth, and tomato paste. Stir well. 6 : Bring to a boil, then simmer covered for 3-4 hours until beef is tender. 7 : Remove beef and shred with forks. Set aside. 8 : Preheat skillet. Dip tortilla in birria broth and place in skillet. 9 : Add cheese, shredded beef, onions, and cilantro to tortilla. 10 : Serve warm with strained broth for dipping.
