1 : In a bowl, lightly mash the diced avocados, leaving some big pieces for added texture. 2 : Add the diced red onion, diced tomato, chopped cilantro, grated garlic, lime juice, salt, cumin powder, cayenne pepper, and black pepper. Mix until well combined. 3 : Lay an egg roll wrapper on a clean surface. Wet all sides of the wrapper with water to make it easier to seal. 4 : Spoon about 2 tablespoons of the avocado mixture onto the lower half of the wrapper, leaving a small border around the edges. 5 : Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll it up tightly, tucking in the filling as you go and seal the egg roll. Repeat the process with the remaining wrappers. 6 : Preheat the air fryer to 400°F. 7 : Lightly spray or brush the air fryer basket with cooking oil to prevent sticking. 8 : Place the avocado egg rolls in a single layer in the air fryer basket, leaving a little space between each roll.
