1 : Add day old rice to a mixing bowl along with 3 egg yolks and salt. Mix until the rice is well-coated. 2 : Heat a wok until smoking. Add oil and rice. Stir and break up any clumps. 3 : Add more salt and white pepper. Mix well and add the scallions. 4 : Serve on a plate or bowl, garnish with more scallions if needed. Enjoy!
