1 : Juice 1-2 oranges to get 1/2 cup of orange juice. 2 : In a mixing bowl, combine chicken, garlic, salt, white pepper, Shaoxing wine, baking soda, and egg. Mix well and marinate for 20 minutes. 3 : Add all-purpose flour and cornstarch to a bowl and mix well. Add the marinated chicken and coat evenly. 4 : Heat 4 cups oil to 350F, carefully add the chicken in batches and fry for 3 minutes until they turn lightly golden brown. 5 : Transfer the chicken onto a cooling rack and let them cool for a few minutes. Bring the oil temperature back to 350 F. Add the chicken back and fry for additional 2 minutes until golden brown. 6 : Make the sauce by combining the listed ingredients. 7 : Turn the heat to medium-low and pour the sauce into a wok. Stir until the sauce thickens. 8 : Add the chicken and mix until all the chicken is coated with the sauce. 9 : Garnish with scallions and serve with rice.
