1 : Combine ground pork, rehydrated mushrooms, ginger, soy sauce, white pepper, salt, egg white, scallions, and heated oil. Mix well, stirring in one direction until fully combined. 2 : Place 1 tbsp of filling in the center of the dumpling wrapper. Wet the edges with water, pinch the middle closed, and pleat one side at a time until fully sealed. 3 : In a skillet over medium heat, add 2 tbsp oil and arrange the dumplings in a single layer. Cook for about 1 minute until the bottoms turn golden brown. 4 : Add 1/2 cup water and immediately cover. Let the dumplings steam for about 5 minutes or until most of the water evaporates. 5 : Remove the lid and continue cooking until all the water evaporates and the bottoms become crispy brown. 6 : Plate the dumplings and serve with dipping sauce made of soy sauce, black vinegar, and scallions. Drizzle with chili oil and garnish with more scallions. Enjoy!
