1: In a mixing bowl, combine ground pork with ginger, light soy sauce, oyster sauce, salt, white pepper, egg, and oil. Mix in one direction for 5 minutes. 2: In a separate mixing bowl, combine the chopped chives with sesame oil. Mix well. 3: Add the ground pork mixture to the chives. Mix until well combined. 4: Wrap the dumplings as instructed. Place them on a large plate and cover them with a damp towel to prevent them from drying out. 5: Boil a large pot of water and add the dumplings one at a time. Make sure to not overcrowd the pot. Stir to prevent them from sticking together. 6: Bring it back to a boil and immediately add 1 cup of cold water. Once boiling again, the dumplings are done. 7: Serve with dipping sauce and top it off with chili oil (optional) and chopped scallions.
