1 : Remove the stems from the Thai chili peppers. You can adjust the spiciness by keeping or removing the seeds. 2 : Place the Thai chili peppers and garlic cloves in a blender or food processor. Blend them until they reach a coarse paste consistency. 3 : Heat the oil in a pan over medium heat. To test if the oil is hot enough, use a wooden chopstick and dip it in the oil. If the end bubbles steadily, then the oil is ready. 4 : Add the chilis and garlic to the hot oil and cook for about 10-15 minutes, stirring occasionally, until the mixture becomes fragrant and the flavors meld together. 5 : Reduce the heat to low and add the salt and sugar. Stir well to ensure all the ingredients are thoroughly combined. 6 : Let the sauce simmer on low heat for an additional 5 minutes. 7 : Remove the pan from heat and allow the sauce to cool down before transferring it to a jar or container. 8 : Store the sauce in the refrigerator for up to a month. Enjoy!
