1 : Heat up the skillet on high heat, add oil along with garlic, ginger, and chili bean paste. Cook for 1 minute until fragrant. 2 : Pour in chicken broth and bring it to a boil. 3 : Turn the heat down to low and add the fish fillet a few pieces at a time, let them cook for about 1 minute while carefully stirring. 4 : Add cornstarch water to thicken the broth. 5 : Transfer everything out on top of a bed of bean sprouts. Add the garnishments on top. 6 : Pour ¼ cup of heated oil over the seasonings and top it off with chopped scallions and cilantro.
