1: Pat dry the tofu, cut into cubes, and toss with 2 tbsp cornstarch. 2: Mix stir-fry sauce ingredients in a bowl and set aside. 3: Heat 1/4 cup oil in a pan and fry tofu until golden. Drain on paper towels. 4: In the same pan, sauté shallot, garlic, ginger, scallion whites, and chili peppers until fragrant. 5: Add the sauce and bring to a light simmer. 6: Mix 1 tsp cornstarch with 1 tbsp water, stir into sauce, and simmer until thickened. 7: Add fried tofu and toss to coat evenly in the sauce. 8: Garnish with scallion greens and serve hot with steamed rice.
