1 : Drain the water from the package and pat the tofu dry with paper towels or a clean kitchen towel. Cut the tofu into 1-inch cubes. 2 : Combine cornstarch, salt, black pepper, and paprika. Mix well. 3 : Add the tofu cubes to the starch mixture and coat evenly. 4 : Heat oil in a wok until hot. Test with a chopstick; it’s ready when the end bubbles steadily. 5 : Carefully add the tofu and stir to prevent sticking. Fry for 5-6 minutes until golden brown. Transfer to a plate lined with a paper towel. 6 : Discard excess oil, leaving about 1 tbsp. Heat on medium-low and add garlic, red chilis, and the white parts of scallion. Stir for 30 seconds until fragrant. 7 : Add the fried tofu along with the dry seasonings, stirring to coat. Once all the seasonings are evenly distributed, turn off the heat. 8 : Serve the tofu on top of rice and garnish with chili oil and scallions. Enjoy!
