1: Add water and salt to a large pot and bring it to a boil. 2: Add the macaroni pasta and bring it to a boil again. 3: Cook uncovered for 6 minutes until al dente. 4: Drain and transfer to a large bowl. Drizzle olive oil, stir and set it aside. 5: In a large saucepan, melt butter over medium heat. 6: Once the butter is melted, add the flour and whisk until combined. 7: Slowly add the milk as you continue to whisk until the mixture is smooth. 8: Add 3 cups of cheese mixture and whisk until all combined. 9: Finally, add the cooked pasta back in and mix well. 10: Pour half of the mac and cheese into a baking dish. 11: Add the remaining cheese to the middle layer but leave a little for topping. 12: Add the rest of the mac and cheese, and finish off with cooked chorizo and cheese toppings. 13: Bake at 350 F for 20 minutes or until the cheese becomes bubbly.
