1 : Cut the ribs into bite-sized pieces and transfer to a mixing bowl. 2 : Add Shaoxing wine, soy sauce, sugar, salt, and white pepper. Mix well. 3 : Toss in ginger, garlic, and fermented black beans. Mix again. 4 : Finally, add the cornstarch. Mix well until the ribs are well-coated. 5 : Let them marinate for at least 30 minutes or overnight for more flavor. 6 : Right before steaming, drizzle sesame oil on top and add red chilis. Place the marinated ribs in a heatproof dish or a shallow plate suitable for steaming. 7 : Cover and steam them over high heat for about 15-20 minutes or until the ribs are fully cooked. To check for doneness, pierce a rib with a fork; it should be tender and no longer pink in the center. 8 : Serve the steamed spare ribs hot and enjoy!
