1 : Peel one potato and cut it into small cubes. Keep them soaked in cold water while preparing the other ingredients. 2 : In a cast iron over medium-high heat, add 1 tbsp oil and ground sausage. Season with Sichuan peppercorns and cayenne pepper. Cook until the sausage turns brown, transfer and set aside. 3 : Drain the potatoes and pat dry. Add the remaining 2 tbsp oil to the skillet and add the potatoes, season with salt and black pepper. Cook until they begin to soften and brown on the sides. 4 : Add onions, red and green chili peppers. Cook until the onions turn translucent. 5 : Add the cooked sausage back and stir. Sprinkle 1/2 cup shredded cheese and mix well. 6 : Make 3 indents and crack eggs on top. Place the skillet in the oven at 400 F for about 10 minutes until the egg whites are set but the yolks are still runny. 7 : Garnish with black pepper, red chili powder, and scallions. Enjoy!
