In a wok, heat up 2 tbsp of oil and cook the shrimp until pink. Transfer out and set aside. Add 2 tbsp of oil back to the wok and crack two eggs. Break them apart as you’re stirring, until there’s no more liquid. Set aside. Heat the wok again and add 2 tbsp of oil, add onion and Thai chili peppers. Cook until the onions turn translucent. Add the rice, soy sauce, chili oil. Mix well. Then add the cooked shrimp back. Stir well. Add the carrots, peas, eggs, and scallions. Mix everything together for another minute. Serve.
